
The best scent in the world is that of apple pie in the oven
Everyone likes apple pie, or at least they should.
This recipe is more about how I like to make my pies than how to make one.
This time I used a mini-pie making kit that I’ve been itching to use. It was easy enough except I think I cut the top mold for the crust wrong. I felt it was too small. In any case my tummy did not mind.
So how do I like my pies?
A) I mix apples – granny smith and something less tart like Fuji or Honeycrisp
B) I drizzle them in cognac and/or vanilla extract. I don’t short change that step. Yes it means I simmer my apples before baking to reduce the liquid, but I’ll pay that price for boozy apples.
C) I throw in some grated ginger and maple syrup cause I like how it melds with the cinnamon
D) I’ve settled on a gluten free crust recipe that is:
- 1 egg
- 3/4 a stick of butter and 3/4 a stick of cream cheese (about 1 cup total)
- Up to 1/4 cup ice water
- 100 grams of rice, 100 grams of tapioca starch, and 50 grams each of potato and cornstarch.
- 1 teaspoon of xanthan gum
- I now only mix my dough using the food processor and place the dough in the fridge or freezer before rolling out in between dusted wax paper.
