Ginger Cookies with Lemon Curd

INGREDIENTS BUSCUIT
1-cup brown rice flour
½ cup cornstarch
½ cup tapioca starch
½ stick salted butter (grated)
½ cup light brown sugar
3 tablespoons grated ginger

INGREDIENTS LEMON CURD
½ cup of sugar
7 tablespoons of lemon juice
2 large egg yolks
1 large egg
1/8 cup of unsalted butter cut into pieces

MATERIALS
1 Large bowl
1 grater
1 micro planer
Saran wrap
Double boiler or glass or metal bowl and pot

INSTRUCTIONS FOR THE COOKIE
Put all the ingredients in a bowl and combine with your hands until smooth
Roll into a cylinder and cover with saran wrap and place in the fridge for 10 minutes or more.
Cut into pieces and let bake on cookie sheet for 5-10 minutes until slightly brown.
INSTRUCTIONS FOR THE LEMON CURD
Whisk first 4 ingredients in medium bowl.
Set bowl over saucepan of simmering water (do not let the bowl to touch the boiling water).
Whisk constantly until thickened about 10 minutes.
Remove bowl from over water. Add butter; whisk until melted.
Let lemon curd cool and use to ‘decorate your cookies’

    Hi Hirut,
    Of all your creations I have tasted, these are the best. Makes me hungry to just read the recipie. And isn’t it funny how the best food often has few ingredients and is not difficult to make – once you know what these ingredients are and how to make it, of course.
